My uncle lives in the country and brought me a bucket of figs! I got busy because they were really ripe. I love your recipe....looks good. I've been eating tomatoes and cucumbers fresh from the garden for weeks. When I get too many, I just make salsa! I'll have to try roasting. My onions have come and mostly gone. I need to plan a triple batch next year. My almost 5 year old has discovered the computer, so I don't get to sit and read as much as I used to. I love tomatoes, though, and I really love roasted vegetables. The olive oil and salt, combined with the roasting technique, just brings out the most wonderful flavor in veggies. And I do think it's much healthier for us. I applaud you and your husband for eating healthy.
