I thought I would share a healthy recipe with you all to start off the weekend.
I first saute a chopped onion in butter, then I add a can of low-sodium chicken broth (I sometimes make my own), and a can of water. To that I add a small, whole cabbage chopped. Add 1 can of Rotel, 1 pint diced tomatoes, (I canned my own), 1 package of frozen Gumbo Veggies or whatever mixed veggies you prefer, then add 1 package of Knorr Vegetable Soup mix (powder) and let it simmer. I also add fresh ground pepper and sometimes I add white beans for protein. I add water as needed.
My husband is not a cabbage or soup lover, but he really likes this and it's perfect for a low-carb diet.
Simple and easy:-)

I remember a cabbage soup diet, and WW had a recipe similar that was a "free" food! Going to buy my veggies and make this. xo

ReplyDeleteI am both a cabbage and okra lover and soup, especially veggie is something I am crazy about. I could eat it anytime--not just in cold weather. This soup looks so good! I'm really getting hungry now.
